I think my question comes down to, 'how can I downgrade to the previous version of iTune?'
Restore the pre-upgrade version of your library database as per the diagram below, then install iTunes 10.7. See iTunes Folder Watch for a tool to scan the media folder and catch up with any changes made since the backup file was created.

I tried to remove the old version and install a new one but get the message 'Older version of ITunes cannot be removed. Contact your technical support group' I have downloaded Itunes6464.msi and saved it in my documents but get a message 'The feature you are trying to use is on a network resource that is unavailable' I have also tried to remove. After the bad idea of 'upgrading' to High Sierra, and working through an endless list of problems, I just ran into a new one. iTunes will no longer recognize my iPod. It's the Classic 160GB (the best iPod ever).
The iPod shows up in the System Report as a USB device. It also shows up on the desktop as a volume. Clearly the Mac recognizes it as an iPod and a working USB device.
iTunes refuses to show it in the list of devices.
In a chat with Apple support, I was told my iPod is no longer supported.
Looking in the Console, I found message from iTunes such as these. This seems to confirm that iTunes no longer recognizes or supports the iPod classic.

A note on the web browsers and iOS9 at least. We are not sure about the reason for this but some web sites, including Apple Support Communities, do not work properly with iOS9, even though they are up to date according to the distributors. I have tried 4 of the 6 in that list and found they would not work with either Apple Support Communities or United Airlines once you start needing to do something with buttons. Presumably there are other sites too. It may have something to do with the browser relying on some component of the outdated iOS software to do basic web site rendering, but some newer features may be absent.
